The Holiday Bikini – How to Make It

We present a simplified take on a cocktail featured on our latest drinks list. This is a batch pre-mixed that is loaded with the essence of the festive period, which makes it perfect for hosting a holiday party. Save the extra citrus syrup for brunch beverages, puddings, or to mix another batch of the drink.

Bikini

Makes enough for 10 people

To make the Clementine Syrup (yields 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar

To make the Premix (produces 850ml, to serve 10)

400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish

Directions

Making the Cordial: Combine all the items inside a pot, bring to a light boil, mixing to dissolve. Then, turn off the stove allowing it to cool completely. Decant to a clean bottle, close it keeping it in the refrigerator, where it will keep for about a month.

To make Batch Mix: Combine the specified spirits and syrup into a large bottle, let it rest for 60 minutes, then filter it preferably using a fine cloth, making it fully clarified.

When ready to serve: Pour 85ml of the cocktail base into your cocktail shaker filled with ice, and stir carefully for a minute until cold. Strain into a chilled martini glass or similar, decorate with the cranberries adding the final touch by giving it a brief mist of the essential oil over the drink.
